Pensacola Visit

It was great visiting with Terri, Crystal, Andy, Desmond, and Puck on Wednesday and Thursday. On Thursday Andy made a vegan version of his favorite Risotto recipe. The dish was naturally creamy without oils, used porcini mushrooms and spinach, and contained no added salt. It was so good. The picture is from Andy’s recipe book, but our dish looked almost just like it.

Earlier in the day Terri, Puck, and I visited Fort Pickens, built with 21 million bricks in 1834. It is perhaps best known for Geronimo’s imprisonment.

After working this morning, I decided to go north along highway 1, thinking perhaps I might make it to Titusville. But I was only a few miles up the road, getting close to Vero Beach, when my stomach reminded me I needed to eat. I have food in the Roadtrek, but just on a whim, I asked Siri for a “vegetarian restaurant near Vero Beach”, knowing a vegetarian joint often has vegan options. I didn’t expect any response at all, but I was in for a pleasant surprise. On to Maria’s Organic Fountain.

Lazy Day at Savannas Recreation Area

No rides and no beaches today. I’m slowly heading north. After stopping at Jonathan Dickinson State Park, I kept moving north and wound up at Savannas Recreation Area near Ft. Pierce, where I’m overnighting with hookups. Yea electricity. I even have wifi here — well, when it’s working anyway. Here are a few photos from both of these peaceful areas.
